How can I make it so that I'm the only person editing pages? Do you find this valuable?

Lock all the pages and do not promote anyone to moderator or administrator. This will make you (if creator) the only one that can edit pages.

If you are the creator, and don't want anyone to edit, just keep everyone a Registered User, they wont be able to edit ANY pages.
* Make sure your settings for who can edit is set to where only people who are Writers can edit. *

Go to: Settings. Then click on: permissions. Make sure it's to where Writers are allowed on the site. Then, they can click on: Apply to be a Writer, which is where the Easy Edit button is suppose to be.
